Fresh pork bellies marinated overnight in salt, sugar, Korean chili, and Japanese red miso paste. The belly is submerged in clarified duck fat cooked overnight at a very low temperature and grilled to order (fall apart tender). Served with kimchi and a tamarind plum glaze.
